Biwa no Shiro holds a special place in the Kanbayashi Shunshō portfolio, named after one of the seven legendary tea gardens established by Shogun Ashikaga Yoshimitsu. This high-quality usucha has an irresistible, sweet milk caramel fragrance and a silky texture. Its complex flavor is dominantly nutty with macadamia and cashew notes, layered with a unique, deep woodsiness reminiscent of sandalwood. Mellower and richer in umami than Usucha Mozumukashi, it leaves a sweet, nutty aftertaste that lingers long after drinking.
